No-beef Singapore style noodles

This recipe (along with many of mine) isn’t an exact science, so you don’t need to measure everything out. Instead, in the method, I’ve given rough amounts, but you can tweak all of them to taste.

If you’re taking care with nutrition, swaps you can make include swapping out the oil for any favoured oil-free method of cooking, using tofu instead of processed faux-meats, or replacing the soy sauce with tamari if you’re gluten free. You can also pack plenty more veg in there. I was just using what was leftover before grocery shop day.

This serves 2, and takes less than 30 minutes to prepare and cook.

Ingredients

  • Vegetable oil
  • No-Beef pieces (or other mock meat/protein of your choice)
  • 1 small red pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 large garlic clove, sliced
  • Frozen peas
  • 2-3 cakes of flat rice noodles, soaked as per instructions on pack, then rinse under cold water
  • Soy sauce
  • Medium curry powder
  • Chilli-garlic sauce
  • Agave Syrup
  • Sesame seeds (my favourite is black)
  • Chopped fresh coriander

Method

  1. Put a splash of vegetable oil (or any cooking oil of choice) into a pan and heat over a medium flame. Add the no-beef pieces and fry until crispy
  2. While the protein pieces are cooking, in a small bowl stir together a glug of soy sauce with 1/2 teaspoon of chilli-garlic sauce and a small squirt of agave syrup. Once the protein pieces are crispy, stir through the sauce, take it off the heat, and transfer the pieces to a bowl to one side
  3. Rinse out your small bowl, and put a big glug of soy sauce in, maybe 1/4 cup, and 1 heaped teaspoon of the curry powder, plus a small splash of the agave syrup. Use a fork to combine it well.
  4. Clean the pan, then once dry, put another splash of vegetable oil in, and heat over a high flame. Add the onions and peppers, and fry for a minute. Then add the garlic, and before it browns, add the peas and continue cooking for a few minutes.
  5. Add the sauce and the soaked noodles, and keep it over the heat while you combine it all, making sure all the noodles are coated in the sauce.
  6. Using tongs, transfer the noodles to 2 bowls, and top each with half of the no-beef pieces, a good sprinkle of chopped coriander, and a shake of sesame seeds.
