Onion bhajis

Ingredients

  • 1/2 cup gram flour
  • 1tsp baking powder
  • 1tsp fennel seeds
  • 1tsp cumin seeds
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1tsp turmeric
  • Pinch of salt
  • 1/2 cup water
  • 1 large red onion, thinly sliced
  • Oil for frying

Method

1. Put the gram flour, spices, salt and baking powder onto a large bowl and combine well.

2. Add the water and mix well into a thick batter. Mix the onions through, ensuring they’re all covered.

3. Pour around 3cm of oil into a deep pan and heat the over a high flame. When you think it’s hot enough, put a spot of batter in, and if sizzles and crisps you’re ready to fry the bhajis.

4. Using a dessert spoon, put a few (depends on the size of your pan) dollops of the mixture into the oil. Cook for 4 or 5 minutes until the onions start to crisp and brown. Flip them over and cook in the other side for 2 or 3 further minutes.

5. Remove from the pan onto kitchen paper, to remove excess grease. Serve with your favourite curries, or eat straight away if you just can’t wait.
