Buttered Turmeric Rice

I made this to go with my samosa pie and spiced cabbage, but I think it would work well with most South Asian meals.

Ingredients

  • 1 cup of white rice, basmati would work well, although I used samba
  • 1.5 cups of cold water
  • 2tbsp butter
  • 2 cloves of garlic, chopped
  • 1 star anise
  • 3 cardamom pods, lightly squashed
  • 1tsp ground turmeric
  • Salt and black pepper to taste

Method

1. Wash your rice until the water runs clear. Place it in a saucepan with 1.5 cups of cold water, cover and bring to a boil. Turn it down to a simmer, and cook for 8 minutes. Then turn heat off, and keeping the lid on allow the rice to steam for 5 minutes. Allow the rice to cool.

2. Add the butter to a large frying pan and heat until melted. Add the turmeric, star anise, cardamom and garlic, and cook in the butter until the garlic starts to brown.

3. Add the cooled rice, and stir well to cover it all in the spiced butter. Fry for 5-10 minutes stirring occasionally.

4. Season with salt and black pepper to taste, then serve with the main dish of your choice.
