
Ingredients
- 1 large or 2 small very ripe bananas
- 1 cup of pain flour
- 1 cup of plant milk (I use oat)
- 1tsp baking powder
- 1tsp apple cider vinegar
Method
- Mash the bananas in a large mixing bowl.
- Add the flour and mix well.
- Combine with the plant milk and mix to make a thick batter.
- Add the baking powder and ACV and stir through.
- Leave for a few minutes, then heat a splash of oil in a large frying pan. Use a ladle to spoon small amounts into the pan, leaving space between the pancakes to flip them.
- Once they have browned on the bottom side, flip using a fish slice (I really need to find a more vegan name for a fish slice).
- Fry for another 1-2 minutes, again until brown on that side. Transfer to a plate with kitchen roll to absorb excess oil.
- Repeat until you’ve used all your batter up, then enjoy with a cuppa 💚
